Lentil Stew

200 g green or brown lentils
1 onion, finely chopped
2 garlic cloves, chopped
2 carrots, sliced
1 sweet potato, diced
1 leek, sliced
1 can diced tomatoes (400g)
1.2 l vegetable broth
1 bay leaf
1 Teaspoon(s) dried thyme
1 Teaspoon(s) dried rosemary
2 Tablespoon(s) olive oil
Salt and pepper to taste
1 Tablespoon(s) apple cider vinegar
Fresh parsley for garnish

Lentil Stew

1. Heat the olive oil in a large pot and sauté the chopped onion and garlic until translucent. Add the carrots, sweet potato, and leek and sauté for about 5 minutes to release the flavors.
2. Next, add the lentils, diced tomatoes, and vegetable broth. Add the bay leaf, thyme, and rosemary, and bring everything to a boil. Reduce the heat, cover the pot, and let the stew simmer for about 25-30 minutes until the lentils are tender.
3. Season the stew with salt, pepper, and apple cider vinegar. Remove the bay leaf and garnish the stew with freshly chopped parsley before serving. Best enjoyed hot, perhaps with a piece of fresh bread!
