🍋How to make lemon and mint panna cotta🍋

200 ml cream
100 ml whole milk
60 g sugar
1 Teaspoon(s) vanilla extract
3 sheets of gelatin
2 organic lemons (juice and zest)
10 fresh mint leaves
1 Tablespoon(s) powdered sugar
4 Tablespoon(s) sparkling water (optional, for mint syrup)
1 Pinch(es) salt

Preparation

  • Total time: 15 min

Prepare the Gelatin

1. Soak the gelatin sheets in cold water for about 5 minutes. Meanwhile, place the cream and milk in a STONELINE® saucepan and heat over medium heat, but do not bring to a boil.

Make the Panna Cotta Mixture

1. Add the sugar, vanilla extract, lemon zest, and a pinch of salt to the cream and milk mixture. Stir well until the sugar is fully dissolved. Then, add the lemon juice.

Add the Gelatin

1. Squeeze the gelatin sheets and add them to the warm mixture. Stir until the gelatin is completely dissolved. Let the mixture cool slightly.

Make the Mint Syrup

1. Heat the sparkling water in a small STONELINE® pan with the mint leaves and powdered sugar. Let it simmer for about 3 minutes until the mint has released its flavor. Remove the leaves and let the syrup cool.

Pour the Panna Cotta into Glasses

1. Carefully pour the still-warm Panna Cotta mixture into small dessert glasses. Refrigerate the glasses for at least 3 hours until the mixture has set.

Finish and Serve

Before serving, spoon a little mint syrup over each Panna Cotta and garnish with a mint leaf. For a more summery touch, you can also garnish with lemon zest.
