300 g Strasbourg sausage (cut into thin strips)
200 g Emmental (cut into cubes)
1 small onion (sliced into thin rings)
4 pickled cucumbers (sliced into thin rings)
1 Tablespoon(s) (Dijon) mustard
3 Tablespoon(s) white wine vinegar
5 Tablespoon(s) olive oil
1 Teaspoon(s) Honey
Salt and pepper to taste
fresh parsley (chopped)
Optional: Cherry tomatoes (halved)

Prepare the sausage and cheese

1. Cut the Strasbourg sausage into fine strips and the Emmental into cubes or fine strips. Add both ingredients to a large bowl.

Add the vegetables

1. Slice the onion into thin rings, the pickles into thin slices. Optionally, you can also halve the cherry tomatoes and add them. Add the vegetables to the sausage and cheese mixture.

Prepare the dressing

1. In a small bowl, whisk together the olive oil, white wine vinegar, Dijon mustard (if using), sugar, salt, and pepper until a smooth dressing forms.

Assemble the salad

1. Pour the dressing over the salad and mix everything well. Sprinkle with fresh parsley and serve immediately. The salad can also be chilled for a while to allow the flavors to meld.
