Salmon Steak with Mushroom Risotto – Autumnal Delight with Earthy Flavors
This dish combines two autumn favorites: tender grilled salmon and creamy risotto with a mix of porcini and button mushrooms. Salmon Steak with Mushroom Risotto
Marinate the salmon steaks with olive oil, lemon juice, salt, pepper, and fresh herbs. Grill them on a barbecue or in a grill pan over medium heat for about 3-4 minutes on each side, until the salmon is still slightly pink inside.
For the risotto, heat the butter and olive oil in a pot and sauté the onion and garlic until translucent. Add the risotto rice and toast briefly until it becomes slightly transparent.
Deglaze with white wine and let it evaporate. Gradually add the warm vegetable broth, stirring regularly over medium heat, until the rice has absorbed the liquid and is creamy but still al dente.
Drain the soaked porcini mushrooms and add them to the risotto along with the button mushrooms. Simmer everything together until the mushrooms are soft and the rice is fully cooked.
Finally, stir in the Parmesan and the remaining butter to make the risotto creamy. Season with salt, pepper, and fresh parsley.
Serve the grilled salmon steaks on top of the creamy mushroom risotto and enjoy immediately.

Sehr lecker und sehr sättigend! Hab etwas mehr Parmesan und noch ein paar Garnelen dazugegeben. Alle waren begeistert!

Der Lachs war super saftig und das Risotto mega cremig. Ging easy und hat richtig gut geschmeckt. Mach ich auf jeden Fall wieder!
