For the Cauliflower Steaks

1 large cauliflower
4 Tablespoon(s) olive oil
Salt and pepper to taste
1 Teaspoon(s) paprika (optional)

For the Almond Pesto

100 g almonds (roasted)
50 g fresh basil
2 garlic cloves
60 ml olive oil
1 Tablespoon(s) lemon juice
Salt and pepper to taste
30 g vegan parmesan (optional)

Prepare the Cauliflower Steaks

1. Preheat the oven to 200 °C (400 °F) and line a baking sheet with parchment paper.
2. Remove the stem from the cauliflower and slice it into about 2 cm thick steaks, ensuring they remain intact.
3. Place the cauliflower steaks on the baking sheet, drizzle with olive oil, and season with salt, pepper, and paprika. Roast for about 25-30 minutes, until golden brown and tender.

Make the Almond Pesto

1. Combine the almonds, basil, garlic, and lemon juice in a food processor.
2. While blending, slowly add the olive oil until the pesto reaches the desired consistency. Season with salt, pepper, and optionally vegan parmesan.

Serve

1. Arrange the roasted cauliflower steaks on plates and drizzle with the almond pesto. Garnish with fresh herbs if desired and serve immediately.
