400 g fresh spaetzle (or homemade)
200 g grated Emmental cheese or mountain cheese
150 g cream
100 g sour cream
2 Tablespoon(s) butter
1 onion, sliced into rings
1 Bunch(es) of chives, finely chopped
Salt and pepper to taste
1 Tablespoon(s) oil for frying the onions

Cook the Spätzle

1. In a large STONELINE® pot with boiling salted water, cook the spaetzle according to the package instructions. Once the spaetzle is ready, drain and set aside.

Prepare the fried onions

1. Fry the onion rings in a STONELINE® pan with a little oil over medium heat until they are golden brown and crispy. Set aside.

In the same STONELINE® pan , melt the butter, then add the cream and sour cream. Heat while stirring until a creamy sauce forms. Add the grated cheese and melt while stirring. Season to taste with salt and pepper.

Toss the spaetzle in the sauce and serve

1. Add the finished spaetzle to the STONELINE® pan with the cheese sauce and mix well so that the spaetzle are evenly coated with the sauce. Continue cooking for about 2-3 minutes over low heat so that the spaetzle absorbs the sauce.

Divide the cheese spaetzle between plates, garnish with the fried onions and freshly chopped chives.
