4 chicken thighs (or chicken breasts)
150 g pearl onions
200 g mushrooms, sliced
2 Tablespoon(s) olive oil
2 Tablespoon(s) butter
1 red wine (e.g. Cabernet Sauvignon)
200 ml chicken stock
1 Teaspoon(s) dried thyme
2 bay leaves
3 garlic cloves, finely chopped
1 Teaspoon(s) sugar
1 Tablespoon(s) flour
1 Teaspoon(s) salt
0.5 Teaspoon(s) pepper
Fresh parsley for garnish

Fry the chicken, pearl onions, and mushrooms

1. Heat the STONELINE roasting pan with 1 tablespoon olive oil and 1 tablespoon butter over medium heat.

Fry the chicken legs on both sides for about 5 minutes until golden brown. Remove the chicken from the roasting pan and set aside.

Add the pearl onions and mushrooms to the same pan and fry for 5-6 minutes until lightly browned. Remove them from the roasting pan as well.

Prepare the red wine sauce, braise the chicken and vegetables

1. Add the remaining olive oil and butter to the same roasting pan and briefly fry the garlic.

Sprinkle in the flour, stir well to avoid lumps, and let it brown for one minute.

Pour in the red wine and stir vigorously. Add the chicken broth, sugar, thyme, bay leaves, salt, and pepper.

Simmer the sauce for 5 minutes to thicken slightly.

Return the browned chicken to the roasting pan and add the pearl onions and mushrooms.

Cover the roasting pan and let everything simmer on low heat for 1 hour until the chicken is tender and the flavors have blended well.

Season to taste and serve

1. Remove the bay leaves and check the sauce for flavor. If necessary, season with salt and pepper.

Garnish the dish with freshly chopped parsley.

Serve the coq au vin directly from the STONELINE roasting pan or a large pan. Serve with mashed potatoes, fresh baguette, or rice.
