Butternut Squash Curry with Rice

1 medium butternut squash (approx. 1 kg), peeled and cut into generous pieces
1 onion, chopped
2 cloves of garlic, chopped
1 piece of ginger (approx. 3 cm), finely grated
1 Tablespoon(s) curry powder
1 Teaspoon(s) turmeric
1 Teaspoon(s) cumin
400 ml coconut milk
400 g chopped tomatoes (canned)
1 Tablespoon(s) tomato paste
1 Teaspoon(s) sugar
2 Tablespoon(s) olive oil
Salt and pepper to taste
200 g basmati rice
Fresh cilantro for garnish

Butternut Squash Curry with Rice

1. Cook the basmati rice according to the package instructions in lightly salted water and set aside.

In a large pot, heat the olive oil and sauté the chopped onion, garlic, and grated ginger until soft and fragrant. Add the curry powder, turmeric, and cumin and toast the spices for 1-2 minutes to release their full flavors.

Add the chopped tomatoes, tomato paste, sugar, and coconut milk. Bring the mixture to a boil and add the squash pieces. Reduce the heat and let the curry simmer for about 25-30 minutes until the squash is tender but still firm. Season the curry with salt and pepper.

Serve the butternut squash curry over a portion of basmati rice and garnish with fresh cilantro as desired.

Dieses Curry ist absolut lecker. Ich habe es gerade nachgekocht und bin begeistert. Der Muskatkürbis ist unglaublich geschmacksintensiv und die Gewürze kommen durch das anrösten richtig schön zur Geltung. Der Ingwer bringt die richtige Schärfe dazu.
