For the falafel

240 g chickpeas (cooked or from a can)
1 small onion, chopped
2 garlic cloves, chopped
1 Bunch(es) parsley, roughly chopped
1 Teaspoon(s) cumin
1 Teaspoon(s) coriander (ground)
1 Teaspoon(s) paprika powder
2 Tablespoon(s) tahini
3 Tablespoon(s) flour (e.g., chickpea flour for a gluten-free version)
1 Teaspoon(s) baking powder
Salt and pepper to taste
2 Tablespoon(s) olive oil

For the tahini sauce

3 Tablespoon(s) tahini
1 Tablespoon(s) lemon juice
1 Teaspoon(s) maple syrup (optional, for some sweetness)
2 Tablespoon(s) water (depending on desired consistency)
Salt and pepper to taste

Prepare the falafel

1. Mash the chickpeas in a large bowl using a fork or an immersion blender until roughly mashed.
2. Add the onion, garlic, and parsley to the chickpea mixture and mix well.
3. Add cumin, coriander, paprika powder, tahini, flour, baking powder, salt, and pepper.
4. Using your hands or a spoon, shape the mixture into small balls (around 20-25 pieces). If the mixture is too sticky, add some extra flour.
5. Place the falafel balls on a baking tray lined with parchment paper and brush with olive oil.

Bake

1. Preheat the oven to 180°C (fan). Bake the falafel for about 25-30 minutes, until golden brown and crispy. Flip halfway through.

Prepare the tahini sauce

1. For the tahini sauce, simply mix all the ingredients in a bowl. Add more or less water depending on the desired consistency. Season to taste.

Serve

1. Serve the baked falafel with the tahini sauce. Optionally, garnish with fresh coriander or lemon slices.
