For the Broth

1 kg beef bones (marrow bones and shank)
300 g beef brisket or tenderloin, thinly sliced (for topping)
1 onion, halved and charred
1 Piece(s) ginger (about 5 cm), split and charred
3 star anise
5 cloves
1 cinnamon stick
1 Tablespoon(s) coriander seeds
1 Tablespoon(s) fennel seeds
3 Tablespoon(s) fish sauce
2 Tablespoon(s) sugar
Salt to taste
2 l water
200 g rice noodles (Banh Pho)

For Toppings and Garnish

Fresh herbs (Thai basil, coriander, mint)
Lime wedges
Spring onions, finely chopped
Chili slices
Mung bean sprouts
Hoisin sauce and Sriracha (optional)

Preparation

  • Total time: 4 h 30 min

Making the Broth

1. Thoroughly rinse the beef bones under cold water in a large STONELINE cooking pot.
2. Bring the bones with 2 liters of water to a boil in the STONELINE cooking pot. Skim off any foam carefully to keep the broth clear.
3. Place the charred onion and ginger, star anise, cloves, cinnamon stick, coriander seeds, and fennel seeds in a spice bag or tea infuser and simmer in the pot.
4. Let the broth simmer gently for at least 3 to 4 hours (ideally with the lid of the STONELINE cooking pot slightly ajar). Skim foam occasionally.
5. After 3 hours, add fish sauce, sugar, and salt to taste.

Preparing the Noodles

1. Cook the rice noodles according to package instructions in boiling water using your STONELINE pot, then drain and set aside.

Serving

1. Distribute the thinly sliced beef evenly into four deep bowls.
2. Strain the hot, clear broth through a fine sieve back into the STONELINE stockpot and bring to a boil. Pour the hot broth over the raw beef so it cooks gently.
3. Add the cooked rice noodles to the bowls and cover with the hot broth.
4.

Garnish the soup with fresh herbs, lime wedges, spring onions, bean sprouts, and chili. Serve with Hoisin sauce or Sriracha to taste.
