Ingredients

For the Cake

250 g Soft butter
200 g Sugar
1 Packet vanilla sugar
4 Eggs (room temperature)
300 g Flour
1 Packet baking powder
2 Organic lemons (juice and grated zest)
150 g Natural yogurt
1 Pinch of salt

For the Glaze

150 g Powdered sugar
Juice of 1 lemon

Preheat the oven to 180°C (160°C fan). Grease the Freyersbacher 26 cm springform pan by STONELINE lightly and dust with flour to ensure the cake can be easily removed later.

In a large bowl, cream together the soft butter, sugar, and vanilla sugar until light and fluffy. Add the eggs one at a time, beating well after each addition to ensure a smooth and airy texture.

Mix the flour with the baking powder and salt. Sift the flour mixture into the butter-egg mixture alternately with the yogurt to avoid lumps. Stir in the lemon juice and grated lemon zest to infuse the batter with a fresh, lemony flavor.

Pour the batter evenly into the prepared springform pan and smooth the surface with a spatula. Bake the cake in the preheated oven for about 40-50 minutes until golden brown. Test with a wooden skewer to ensure the cake is cooked through: if no batter sticks to the skewer, the cake is done.

5.

Let the cake cool in the springform pan for about 10 minutes before turning it out onto a wire rack to cool completely. This will help the cake retain its shape and stay moist.

6.

For the glaze, mix the powdered sugar with the lemon juice until smooth and thick. Spread the glaze evenly over the cooled cake and let it set. This glaze adds an extra lemony kick and a delightful sweetness to the cake.

Super lecker, habe lange nach einem Rezept gesucht für einen fluffigen und wirklich zitronigen Kuchen gesucht und gefunden.

Habe ihn nachgemacht und der Kuchen ist so gut!! Wir lieben ihn. Leider ist mir die Glasur (wieso auch immer) nicht ganz so „weiß“ gelungen aber ansonsten sehr gut und meiner Meinung nach an, schmeckt er noch viel besser, wenn er kalt ist (im Kühlschrank) Danke für das Rezept!!
