Ingredients

For the Crust

200 g wholegrain cookies (or butter cookies)

100 g butter, meldet

1 Teaspoon(s) cinnamon (optional)

For the filling

600 g cream cheese

200 g quark

150 g sugar

1 Pack(s) vanilla sugar

3 eggs

100 ml heavy cream

1 Tablespoon(s) lemon juice

1 Teaspoon(s) vanilla extract

Prepare the crust

1. Prepare the STONELINE® Non-Stick Baking Pan by lightly greasing it or lining it with baking paper.

2. Place the cookies into a Mortar or stand mixer and crush them into fine crumbs.

3. Mix the crushed cookies with the melted butter and cinnamon.

4. Evenly spread the cookie mixture into the baking pan and press it down firmly to form a solid base. Bake in the Oven at 180°C for 10 minutes, then remove and let it cool.

Prepare the Filling

1. In a large bowl, beat together the cream cheese, quark, sugar, vanilla sugar, eggs, heavy cream, lemon juice, and vanilla extract until smooth.

2. Pour the mixture over the cooled cookie crust and spread it evenly.

3. Carefully place the STONELINE® Baking Pan into the preheated STONELINE® Oven and bake the cheesecake at 160°C for about 50-60 minutes until the surface is lightly golden and the center is slightly wobbly.

4. Let the cake rest in the oven with the door slightly open for 30 minutes to prevent cracking. Then, allow it to cool completely and refrigerate for at least 3 hours, preferably overnight.

Serving

Release the cheesecake from the STONELINE® Baking Pan and place it on a nice platter. Garnish with fresh fruits or a fruit sauce of your choice and enjoy!
